As Good As It Gets

Skillet Fried Oysters are a local favorite because of the generous bounty of fresh oysters available in the waters off St. George Island and nearby Apalachicola. When in season, fresh oysters are available from a variety of local seafood vendors and shucking houses— from water to table on the same day!

    Ingredients
  • 3 tbsp butter or margarine
  • 3 tbsp vegetable oil
  • 2 dozen shucked large raw oysters, drained
  • 2 eggs, beaten
  • 3 cups cracker crumbs
  • 3/4 to 1 tsp salt
  • 1/4 tsp pepper
  • snipped parsley
  • paprika
  • lemon wedges
Directions: Heat the butter and oil in a skillet. Roll the oysters in the egg and cracker crumbs and sprinkle with salt and pepper. Saute the oysters, turning once, until golden brown. Sprinkle the parsley and paprika on top and garnish with lemon.
